Soba noodles are made from buckwheat and wheat flours. They are traditionally served cold but can also be used in soup or stir-fry.
Preparation of noodles
Bring a large saucepan of water to the boil. Add 1 packet of Obento Soba Noodles and cook for 1-2 minutes. Drain and rinse under cold water.
Traditional cold soba noodles
Prepare noodles according to instructions, refrigerate until cold. In a bowl mix 1/2 cup Obento Mirin Seasoning, 1/4 cup soy sauce, 1 cup dashi soup stock, wasabi to taste. Add noodles to the sauce and enjoy.
Yaki Soba Noodles (serves 2)
Prepare noodles according to instructions. In a bowl, mix 2 tablespoons soy sauce, 2 tablespoons sugar and 2 tablespoons sesame oil. Heat 1 tablespoon oil in a wok, add 150g thinly sliced chicken and stir-fry for 2-3 minutes. Add 250g mixed vegetables and stir-fry for a minute. Add Obento Soba Noodles and sauce mix and combine well. Make a well in the centre and pour in 1 beaten egg and cook for 1-2 minutes. As soon as egg starts to set stir through. Garnish with thinly sliced spring onions and sesame seeds. Serve hot.
